Our winery  in Serranía de Ronda is dedicated to preserving ancestral grape varieties, honoring the rich winemaking heritage of the Serranía de Ronda—an area with a history spanning millennia. By combining modern techniques with a meticulous vinification process, we create high-quality wines that truly express the essence of our terroir.

Tour Itinerary

• Welcome & Introduction: Guests are greeted at the winery entrance, where we introduce our project, values, and efforts to revive native grape varieties at risk of disappearing.
• Vineyard Walk: Stroll through our experimental vineyard, where we cultivate and study different native grape varieties. Learn about their unique characteristics and historical significance in the region’s winemaking tradition.
• Winery Visit: Follow the grape’s journey from harvest to vinification in our state-of-the-art facilities. Discover the winemaking process, from fermentation to barrel aging, using innovative methods that ensure exceptional quality.
• Wine & Olive Oil Tasting: The experience concludes with an exclusive tasting of three wines, expertly paired with local delicacies. Additionally, enjoy two of our finest extra virgin olive oils, served with rustic Ronda wheat bread and Iberian ham. Weather permitting, one of the tastings will take place outdoors beneath the shade of a magnificent centenary holm oak, while the remaining ones are held in our cozy tasting room.
